AppeTeaser: Slow Roasted Tomatoes

 

 

 

 

 

 

 

Slow roasted tomatoes as a salad: served warm or chilled...

--Quarter tomatoes, season with salt, pepper, oregano

--Place on cookie sheet or preferably a perforated roasting pan

--Roast at 200 degrees until they look good and roasted (30- 45 minutes)

 

                                                                     Basil-garlic oil......

--Fresh basil, fresh garlic, virgin olive oil or sesame oil, salt and pepper in blender... to your taste and consistency

--Place tomato wedges artistically on mirror of oil, sprinkle some capers or chopped cucumbers, garnish with fresh sprig of basil
